Pumpkin Squares

A few beautiful mums added to the front porch for our Autumn decorations.  I just love love love this time of year.  Particularly the colors and smells.
 It was Luke and Ava's turn for snack at school on Friday so we decided to make Pumpkin Squares as a special treat.
They are super simple and yummy!  All you need is canned pumpkin, Cool Whip, grahams and cinnamon.   I blend one can of pumpkin with one tub of Cool Whip and sprinkle with cinnamon to taste.  Place a dollop of pumpkin on half a graham cracker square then sandwich with the other half. We love them just like this, Max thinks they need to be sweeter.  I guess you could add a little sugar as well.  I like it without and so do the kids.
Place Pumpkin Squares in freezer for about an hour until insides are frozen.  Then we wrapped each Pumpkin Square with wax paper and added a festive fall sticker.  This recipe made us about 32 squares. 
It was also one of their teachers birthday, so we brought her a beautiful mum that we wrapped in fall colored owl fabric.  The Pumpkin Squares were a big hit.  We'll make them one more time for Colin's class on Monday.
